Fiss imperial barley
The theme for this year’s Culinary Autumn event is Fiss imperial barley. This ancient crop was bred in Fiss in the interwar years, but production then fell into obscurity. Then farmers from the Tyrolean Oberland started to grow the cereals again using remnants from the remaining stocks of the Korn-Genbank. This proved very successful – prime examples include launches by distillers Christoph Kössler from Stanz and Gerhard Maass from Prutz of oak-barrelled barley brandy and regional whisky, while Zillertal Bier have produced a special beer made with Fiss imperial barley. Last winter, restaurants in Ski Dimension Serfaus-Fiss-Ladis used hundreds of kilos of regional barley to make risotto and barley soup. This autumn, professional chefs from these mountain restaurants will be sharing their secrets in special cooking classes. Here’s a little taster:
Barley soup (serves four)
Ingredients: 80g rolled barley, 2l vegetable broth, 250g smoked meat, 1 spice bag, 1 bay leaf, 10 crushed peppercorns, 1 sprig of thyme, 1 pinch of cumin, 100g onion, 60g carrots, leek, celery, 400g floury potatoes, salt, pepper, nutmeg, garlic, 1 bunch chives, 1 lovage leaf
Method: Wash the rolled barley well. Then sauté the finely chopped onion in butter, add the barley and pour on the broth. Add the spice bag and cook until the barley is relatively soft. Add finely chopped vegetables and potatoes and cook for about 15-20 minutes until soft. Dice the smoked meat and add it to the soup. Season with salt, nutmeg and garlic and sprinkle with fresh herbs.
